1. Tagine
The quintessential Moroccan dish, named after the conical earthenware pot it's cooked in. This slow-cooked stew can be made with lamb, beef, chicken, or fish, combined with vegetables, fruits, and spices. The lamb tagine with prunes and almonds is a classic.
2. Couscous
Traditionally served on Fridays, couscous is a staple. Fine wheat pasta is steamed over a stew of meat and vegetables. When served, the meat is covered by a pyramid of couscous, and the vegetables are pressed into the sides, with the sauce served separately.
3. Pastilla (or B'stilla)
A complex and delicious pie that combines sweet and savory flavors. It's a flaky pastry filled with pigeon or chicken, almonds, and spiced with cinnamon and saffron. The top is dusted with powdered sugar and more cinnamon.
4. Harira
A rich tomato, lentil, and chickpea soup, often served to break the fast during Ramadan, but available year-round. It's hearty, flavorful, and incredibly comforting.
